The estate

Set in a wine-growing area belonging to the Hautes Côtes de Beaune, the Domaine Jean Féry et Fils works a dozen hectares from Echeveronne, behind Pernand-Vergelesses, scattered alongside the Côte, from Gevrey to Chassagne. It has been a family estate since the 19th century, and since then, we have acquired almost twenty different appellations in parcel selections. In 2008, we asked to be incorporated in organic agriculture with the aim of expressing our terroirs to the best. It is thus a new philosophy which is developing on the estate, thanks to Pascal Marchand, former manager (« régisseur ») of the Domaine de la Vougeraie. The vines are treated with Ecocert-certified organic products (organic composts, plant oils, seaweeds...) and in homoeopathic doses.
Grapes are hand-picked in flat boxes, Chardonnay grapes are wholly pressed, yeasts are natural, and white wines are left to age in casks for one year. Pinots are often de-stemmed but if the year allows it, part of the stems are left to macerate during vatting. Red wines remain two winters in the cellar before being bottled. This long wait in casks avoids filtration before bottling.
